I'd suggest doubling the amount of bacon. I also put in more onion than suggested (both yellow and red). And if you're using kosher salt, you're going to need a lot of it. It makes a lot of soup, so you can definitely have it for leftovers the next day.
Looks delicious, and I don't even eat bacon. I'm going to adapt this beautiful-looking soup to a veg. version. I hope I can manage to somehow. A substitute rich and deep like bacon...hmm. I wonder if oil-packed sun dried tomatoes would be any good.
You should totally try it, Mia. We are all about recipe modification. Are you a vegetarian or do you just not eat pork? If it's the latter, a good option might be to substitute turkey bacon.
