Your new favorite summer cocktail, pt. 2

 
Have you ever made rhubarb simple syrup? You simply must. It's very easy to make and adds a wonderful flavor to cocktails. Plus, that color! We like to mix it with vodka, limeade, a couple ice cubes and a lime wedge. Another perfect summer cocktail.

Rhubarb Simple Syrup
  • two cups chopped rhubarb
  • one cup sugar
  • 1 1/2 cups water
Combine ingredients in a medium pot and bring to a boil. Reduce heat and let simmer until rhubarb is soft (20 minutes or so). Pour the contents into a fine strainer, mashing the rhubarb until no liquid remains. Let cool and then drink up!

  2. i LOVE rhubarb soda! in fact, i think i'm gonna make some today. can't believe i've waited this long into rhubarb season (when i have an abundance of it in my backyard!).
